Moles are thick sauces originating in South Central Mexico among the indigenous populations whose central ingredient are chili peppers. Dried chili peppers are combined with other ingredients, most typically fruit, nuts, spices, and ground (by hand originally, using a metate) to form a thick paste, to which stock is added, the mixture being slowly simmered, sometime for hours. The sauce is then used a supplement to meat or rice, or poured over other dishes like enchiladas, omelets or chilaquiles to elevate them to the next level.
