We Love Burgers (WLB among friends) has been flippin’ and selling burgers for a handful of years and now has three locations in Mexico City.

They recently opened a location in the trendy “rotunda of restaurants” (that’s a name I made up) surrounding the Puente de la Cibeles.

The décor at this location is straight from the book of trendy, modern, loft-like décor. This is sure to please the residents in this Roma Norte neighborhood looking for the new “hip” place to eat.

The waitress was both beautiful and friendly. And efficient to boot. No flaw in the service, although I was there very early for lunch before anyone else began wandering in.

They don’t really have a “classic” cheeseburger with the standard lettuce, tomato and onion condiments. The closest thing is, I believe, the OUT N IN burger, a slight variation on the world-famous In-and-Out Burger (which features cheese, lettuce, tomato and thousand island dressing (known as the “spread”)). The WLB version adds caramelized onions (clearly an improvement on the classic).

This burger, on arrival, was a beauty. I cut into to view a cross-section, and it just oozed beautiful juice. The grind was course. Sufficient fat to make it juicy and delicious. Perfectly seasoned. The onion was sweet. Dark purple. Possibly sautéed in wine. And that thousand-island dressing was absolutely delicious. It was cooked perfectly. Just a hint of pink in the center. That cheese was melted over that patty. This was a masterpiece. A beautiful work of burger art.

The French fries were “mostly peeled”, with just enough bits of peel remaining to prove they weren’t frozen and bagged. Hot and crisp.

No salt shakers. In fact, when I request a bit of salt they brought me a small ramekin of salt. No shakers? What’s with Mexico not having salt shakers in the restaurants?

Notwithstanding, this was a great burger. These were really good fries. One of the best burgers, if not the best burger, in Mexico City. Supplemented by reasonable prices a pleasant atmosphere and good service, what’s not to like?
