Half would say El Chinito. The other half, La Lucha. Both restaurants have experienced a decent modicum of success allowing for franchise opportunities and continued growth. <\/p>\n<p>La Lucha has a very different history. This chain of sandwich shops that has now gone international, with franchises in both Colombia and Chile, is a rather recent phenomenon. Unlike the sixty years plus that El Chinito has been frying the pork, the Peruvian sandwich-restaurant chain has only been in existence since 2009. But the founder of the company, C\u00e9sar Taboada, born in the Piura region of Peru, has diligently pursued growth while keeping quality a core-value of the company.<\/p>\n<p>He is an astute businessman that understands the fundamentals of a successful business and what he didn\u2019t know about franchising, he soon learned.<\/p>\n<p>As a result of this more business-like approach to the chain\u2019s expansion, the design and d\u00e9cor of each La Lucha restaurant is by the book.<\/p>\n<p>There\u2019s a consistent application of policy with carefully trained employees. There\u2019s consistent design and d\u00e9cor. There are policies and procedures designed to keep the quality of the sandwich and the service at a high level.<\/p>\n<p>Now, as you might expect, this cookie-cutter growth, results in an ambiance that lacks the individual personality that a non-chain restaurant might possess. <\/p>\n<p>But the service is first-class because the men and women that work at La Lucha are meticulously trained. Many, if not most, were born in Taboada\u2019s birthplace, and have come to Lima seeking employment opportunities. Peruvians aren\u2019t a tall lot. And the individuals coming from Piura are a bit more diminutive than the average Peruvian. The employees at the flagship restaurant overlooking Parque Kennedy are downright tiny. So short, in fact, that the employees behind the counter stand on wooden-boxes to be at eye-level with the tall German tourists that order sandwiches at La Lucha.<\/p>\n<p>But, what the employees lack in stature, they make up for with delightful personalities. This is the friendliest bunch of restaurant-workers in Latin America.<\/p>\n<p>The food is consistently good. One of our complaints about the sandwiches at El Chinito is that the size of the sandwich has been shrinking over the past few years. Well the sandwiches at La Lucha are probably even smaller with less stuff in between the bread slices than those El Chinito. So, if quantity is at the top of your list, there might be better options than La Lucha to satisfy your dining demands. La Lucha also suffers from the same lack of condiments and side-dishes that we complained of in our review of El Chinito.<\/p>\n<p>There are a couple of other differences. La Lucha offers roast-beef, El Chinito doesn\u2019t.
