Despu\u00e9s de lograr un \u00e9xito fenomenal en los primeros a\u00f1os despu\u00e9s de su apertura, Central traslad\u00f3 su sede al barrio de Barranco, un barrio m\u00e1s bohemio que el anterior en el \u00e1rea tur\u00edstica de Miraflores. A pesar de estar ubicado en un barrio que es un poco m\u00e1s \u00e1spero alrededor de los bordes, la nueva propiedad es mucho m\u00e1s impresionante que las excavaciones anteriores. Detr\u00e1s de una alta pared blanca que rodea el complejo de restaurantes, se encuentra una impresionante estructura contempor\u00e1nea con vistas a un jard\u00edn frontal igualmente impresionante. <\/p>\n<p> Tras el traslado a las nuevas instalaciones, el propietario y chef ejecutivo de Central, Virgilio Martin\u00e9z, dedic\u00f3 m\u00e1s de la mitad del gran edificio a un nuevo restaurante m\u00e1s relajado, Kjolle, que presenta lo que parece ser un enfoque casi id\u00e9ntico en la cocina. <\/p>\n<p> Como Central, el personal de Kjolle ha buscado ingredientes \u00fanicos e interesantes para el men\u00fa del vasto terreno de Per\u00fa. Hay un \u00e9nfasis en las m\u00e1s de 4,000 variedades de papas y otros tub\u00e9rculos que son nativos del diverso paisaje andino de Per\u00fa y muchos ingredientes de la jungla amaz\u00f3nica de Per\u00fa. <\/p>\n<p> \u00bfQui\u00e9n no ama las cocinas Nikkei y criollas tradicionales de Lima? Pero hay un l\u00edmite en el n\u00famero de tazones de ceviche y papas rellenas que un ser humano puede comer sin anhelar un poco de variedad. Kjolle h\u00e1bilmente ofrece ese interesante contraste. <\/p>\n<p> Y, a diferencia del rid\u00edculamente caro Central en la otra mitad del edificio, Kjolle, aunque m\u00e1s caro que la mayor\u00eda de los restaurantes, ofrece su visi\u00f3n \u00fanica de la cocina gourmet peruana de la chef Pia Le\u00f3n y Virgilio Martin\u00e9z a un precio eso no obligar\u00eda a los comensales hipotecar su casa solo para pagar la factura. <\/p>\n<p> En t\u00e9rminos de ambiente, Kjolle, super\u00f3 con creces las expectativas. En mi opini\u00f3n, la decoraci\u00f3n es m\u00e1s bonita que la que se encuentra al lado en Central. La ubicaci\u00f3n en el segundo piso y los comedores con vistas a la actividad del primer piso y al jard\u00edn que se encuentra debajo son excepcionalmente elegantes, pero informales. Ver\u00e1 turistas en bermudas y grupos de hombres y mujeres de negocios con trajes que ofrecen un alboroto simbi\u00f3tico que funciona. Funciona perfectamente. <\/p>\n<p> La decoraci\u00f3n, aunque un poco austera, es un dan\u00e9s moderno de buen gusto, con tonos neutros de la tierra. <\/p>\n<p> El disfrute de la salida culinaria es ayudado por un grupo de j\u00f3venes camareros y camareras perfectamente formados.
