Parece que tiene el dedo en el pulso p\u00fablico. Todo en sus restaurantes, desde la decoraci\u00f3n a la m\u00fasica son lo que los consumidores de hoy est\u00e1n buscando en una experiencia culinaria. Su capacidad para entrenar a contratar y capacitar al personal adecuado es la pluma en su cap\u00f3 restaurateur.<\/p>\n<p>Su men\u00fa no es m\u00e1s complejo de lo necesario. Una variedad de platos que \u00e9l y su tripulaci\u00f3n de chefs tienen la capacidad de preparar<\/p>\n<p>Me he quejado innumerables veces de las malas croquetas que me han servido en Am\u00e9rica Latina en unas dos docenas de ocasiones. Pero las croquetas de pescado que me sirvieron en Rafael fueron lo que he estado buscando. Un relleno ligeramente grueso, bien sazonado, con un exterior crujiente. Probablemente usaron panko para obtener esta corteza ultra-crujiente en la croqueta. Un delicioso curry asi\u00e1tico sell\u00f3 el trato.<\/p>\n<p>El plato principal, una lubina de color blanco escamoso, perfectamente chamuscada, acompa\u00f1ado de unas pocas vieiras y un pur\u00e9 de pl\u00e1tano dulce sentado en un tacu tacu ligeramente crujiente, en chile verde de Osterling y cilantro \"Piruano\" salsa. Este es un plato bien orquestado con una variedad de sabores de cortes\u00eda. El pur\u00e9 de pl\u00e1tano ofrece la dulzura requerida. Es agrio, es dulce, es delicioso. Mi \u00fanica queja, las vieiras estaban perdiendo un muy necesario sear en al menos un lado.<\/p>\n<p>Para el postre, tuve las peras caramelizadas, con toffee panna cotta y un crumble de avena. Un postre aceptable, pero no pedir\u00eda otra vez. El plato habr\u00eda beneficiado si la panna cotta se sirve fr\u00edo. El crumble de avena no a\u00f1adir mucho al plato. Tal vez un crujiente, desmenuzarse con un poco de nuez moscada o canela para agregar una nota m\u00e1s al plato. Un buen postre, simplemente no es un gran en mi opini\u00f3n.<\/p>\n<p>En general, la comida era muy buena.
