Domingo de Pascua. Las ni\u00f1as sentadas llevaban sus elegantes vestidos de Pascua. Tela escocesa Rosada y color agua. \u00bfEl local para esta excursi\u00f3n de la tarde? Yo estaba en el famoso Astrid y Gast\u00f3n en San Isidro, el barrio afluente de Lima. Es aqu\u00ed donde el restaurador y diplom\u00e1tico de cocina peruana, Gaston Acurio, y su esposa Astrid, recientemente trasladaron su restaurante de Miraflores, despu\u00e9s de d\u00e9cadas de dominar restaurantes de alta gama en Sudam\u00e9rica en la ubicaci\u00f3n de Miraflores.<\/p>\n<p>El restaurante ahora ocupa una impresionante mansi\u00f3n remodelada que m\u00e1s se asemeja a un museo de arte que de un restaurante. Y de hecho, las obras de arte de aspirantes a artistas decoran las paredes de cada uno de los comedores interiores de la gran mansi\u00f3n.<\/p>\n<p>El bar tambi\u00e9n es impresionante, al igual que el Pisco Sours y Capit\u00e1ns siendo batidos minuto a minuto por los h\u00e1biles mescladores detr\u00e1s del bar.<\/p>\n<p>Eleg\u00ed sentarme en el gran atrio con vistas a la concurrida cocina. Doce cocineros, con apenas el espacio suficiente para pasar unos a otros estaban ocupados en su trabajo de preparaci\u00f3n. El jefe de cocina es un tipo del tama\u00f1o de un tanque Panzer. En el lapso de dos meses habr\u00e9 comido en Astrid y Gast\u00f3n en tres ciudades latinoamericanas separadas. No quiero estropear la emoci\u00f3n de todo con treinta platos separados (algunos de los cuales podr\u00edan ser repetitivos) as\u00ed que rechaz\u00f3 la opci\u00f3n de ir con el men\u00fa de degustaci\u00f3n y optamos por mi prueba de los tres platos habituales.<\/p>\n<p>Para el aperitivo, ped\u00ed la especial de Pascua, las croquetas de bacalao. Me he quejado en m\u00e1s de una ocasi\u00f3n sobre c\u00f3mo cada croqueta que me han servido en Am\u00e9rica Latina se parece a un palito de pescado congelado y no sabe mucho mejor. Bueno, estoy aqu\u00ed para decirles que estas croquetas, rellenas con una mezcla de bacalao y esta salsa de mozzarella de b\u00fafala rezumante no estaban remotamente cerca de palitos de pescado congelados Cap'n Gorton. Eran excelentes.
