El Ranchero. Mucho ha cambiado desde entonces. Pero El Ranchero todav\u00eda est\u00e1 all\u00ed, en Vitacura, preparando tacos y margaritas. <\/p>\n<p>Para m\u00ed, la comida mexicana y su hermana m\u00e1s conocida, Tex-Mex, han sido parte de mi vida por mucho tiempo. He estado comiendo tacos mucho m\u00e1s tiempo de lo que la mayor\u00eda de las personas han estado vivas. <\/p>\n<p>Entonces, puedes apostar, encontrar un lugar que sirviera buena cocina mexicana fue un lugar destacado en mi lista de objetivos cuando vine a Am\u00e9rica Latina. Primero fui a un par de lugares que dec\u00edan que serv\u00edan cocina mexicana. Pero cuando vi \"frijoles refritos\" o \"refritos\" en la jerga mexicana, como \"pur\u00e9 de porrotos\" en el men\u00fa de uno de esos restaurantes, supe que me esperaba una mala experiencia. Hab\u00eda \"Como Agua Para Chocolate\", todav\u00eda en el negocio en Bellavista, pero ese restaurante est\u00e1 en una categor\u00eda propia que no es la principal comida mexicana. Explicamos por qu\u00e9 en nuestra revisi\u00f3n de ese restaurante aqu\u00ed. <\/p>\n<p>Puedes imaginar el alivio que sent\u00ed cuando dos amigos y yo entramos en El Ranchero y comenc\u00e9 a leer el men\u00fa y vimos cuatro p\u00e1ginas de aut\u00e9ntica cocina mexicana que llamaban a los platos sus nombres reales. S\u00ed. \u00a1Ten\u00edan \"frijoles refritos\" en el men\u00fa! <\/p>\n<p>Y puedes imaginar mi mayor deleite cuando despu\u00e9s de pedir dos o tres platos diferentes, todo sab\u00eda a aut\u00e9ntica comida mexicana, no a una r\u00e9plica sofisticada dise\u00f1ada para enga\u00f1ar a los santiaguinos. <\/p>\n<p>El restaurante incluso ten\u00eda un aspecto y un estilo kitschy mexicano. Fue bastante cerca de lo aut\u00e9ntico. <\/p>\n<p>Muebles pintados de colores. Lote de baldosas de barro pintadas a mano. E incluso el asador apilado con carne sazonada utilizada en el m\u00e1s ic\u00f3nico de todos los tacos mexicanos, los \"tacos al pastor\". <\/p>\n<p>La comida estuvo buena. El personal era amable y se hab\u00eda tomado el tiempo para aprender un poco sobre la cocina. Los precios fueron mejores de lo razonable, especialmente para esta ubicaci\u00f3n en Vitacura. <\/p>\n<p>Una d\u00e9cada m\u00e1s tarde, hay algunas nuevas adiciones al g\u00e9nero de la comida mexicana en Santiago. Hay un par de \"puestos de tacos\", como los llamamos en Texas. Uno de ellos es un peque\u00f1o restaurante tipo quiosco en Franklin llamado Envy-Taco. Y el otro un cami\u00f3n de comida llamado Pinche Gringo. Ambos sirven excelentes versiones de tacos mexicanos populares, pero no mucho m\u00e1s. <\/p>\n<p>La otra, Catrina, es un restaurante un poco m\u00e1s exclusivo en Alonzo de C\u00f3rdoba que sirve una fusi\u00f3n mexicana que lleva la cocina a un nivel m\u00e1s alto y m\u00e1s sofisticado.
