Seg\u00fan los propietarios, los clientes originales del restaurante eran artistas y bohemios. A principios de la d\u00e9cada de 1990, los propietarios trasladaron el restaurante a una de las zonas m\u00e1s pr\u00f3speras de la ciudad, a un par de cuadras de la mayor\u00eda de los principales hoteles. <\/P> De todos los restaurantes que he frecuentado, este tiene la multitud mejor vestida en todo Santiago Las mujeres de familias adineradas que viven en las cercan\u00edas de Las Condes y Vitacura adoran ponerse sus pieles durante los meses de invierno y gastarlas en Pinpilinpausha. <\/P> El restaurante tiene una decoraci\u00f3n sencilla y sin pretensiones. La m\u00fasica era un popurr\u00ed de Christmas Songs. Normalmente no me quejar\u00eda si escuch\u00e9 a Michael Buble cantar una versi\u00f3n de \"Winter Wonderland\". Solo un problema \u00a1Fue a fines de enero! <\/P> Lo m\u00e1s singular del ambiente es que todo el personal de los camareros es, de hecho, camareras. Est\u00e1n vestidos con uniformes \"nanna\" (\"mucama\") en blanco y negro almidonados, lo que contribuye a la impresi\u00f3n de que se le est\u00e1 sirviendo comida preparada por su \"personal personal\" de cocineros y asistentes. Pero a pesar del aspecto formal de las camareras, en mi reciente visita solo hab\u00eda manteles individuales y servilletas de papel. Sirvieron algunas aceitunas verdes para picar como un adelanto previo a las comidas. Y trajeron una canasta de pan fresco. Pero fue esa misma aburrida baguette ins\u00edpida que se sirve religiosamente en todo Chile y Argentina. <\/P> He comido en este restaurante en numerosas ocasiones y el servicio y la calidad de la comida siempre ha estado por encima de la media con solo un deslizamiento ocasional en el servicio o ejecuci\u00f3n y los precios son bastante razonables. <\/p>\n<p> En mi \u00faltima visita ped\u00ed un aperitivo que era una sopa de almejas y mejillones. La sopa ten\u00eda cantidades abundantes de los mariscos en un caldo sabroso. Not\u00e9 un poco de arena en el \u00faltimo bocado. Y hubo un peque\u00f1o retraso en el servicio en este curso. No pudieron poner ning\u00fan plater\u00eda en la mesa. Es dif\u00edcil comer sopa sin una cuchara ... a menos, por supuesto, que est\u00e9s en China. <\/P> El plato principal era un estilo mediterr\u00e1neo mediterr\u00e1neo merluza al horno. El pescado blanco escamoso se sirvi\u00f3 en un caldo con tomates y aceitunas negras. Fue muy bueno, pero podr\u00eda haber usado algo, tal vez un poco de Cayena, para darle un impulso. Con ese pescado casi sin sabor como lienzo suave, algunas manchas de pintura bastante brillantes habr\u00edan animado la imagen. <\/P> Pinpilinpausha fue, hasta hace poco, la \u00fanica opci\u00f3n para la cocina espa\u00f1ola de calidad en Santiago. Desde entonces hemos visitado Lusitano y Casaluz en Barrio Italia, y el bar de tapas cercano, Gracia, todos ofrecen cocina de esa parte del mundo.
