Ambros\u00eda recientemente se mud\u00f3 de una ubicaci\u00f3n en el centro de Santiago a su actual ubicaci\u00f3n suburbana en un barrio tranquilo en las afueras de Vitacura. Los propietarios hicieron un excelente trabajo remodelando una casa residencial para acomodar el restaurante y es perfectamente adecuado para ese prop\u00f3sito. De hecho, en el pasillo de la entrada hay fuentes y jardines que rodean los comedores que le da un toque hogare\u00f1o pero elegante al lugar.\n<\/p>\n

Estuve acompa\u00f1ado por varios amigos en esta visita a Ambros\u00eda, as\u00ed que iba a poder poner a Ambrosia en una verdadera prueba. Mis compa\u00f1eros y yo decidimos pedir una amplia variedad de art\u00edculos del men\u00fa y probamos los diversos platos que me permitieron probar las capacidades de la cocina en una variedad de art\u00edculos del men\u00fa. Por esta raz\u00f3n, ver\u00e1s una selecci\u00f3n mucho m\u00e1s amplia de platos en las fotos y una descripci\u00f3n de m\u00e1s art\u00edculos, aunque en aras de la brevedad lo mantendr\u00e9 breve en los platos ordenados por mis acompa\u00f1antes.\n<\/p>\n

Curso de aperitivo: La mesa pidi\u00f3 el ceviche, un asado de carne de res y esp\u00e1rragos, queso de cabra con un caldo de fresa. Todo excelente. Delicioso, sabores interesantes. Cada uno ejecutado perfectamente.\n<\/p>\n

Para el plato principal tuve el estofado con gnocchi y zanahorias. La carne estaba hecha a la perfecci\u00f3n. Se Desmoronaba sin tener que usar un cuchillo. El gnocchi estaba fresco y sabroso. Un compa\u00f1ero pidi\u00f3 el bistec con quinua. De nuevo, perfectamente preparado y la quinua era sabrosa con la consistencia perfecta. Un tercer compa\u00f1ero pidi\u00f3 los tallarines con jam\u00f3n ib\u00e9rico. La pasta obviamente se hizo en casa, y la salsa era acertada.\n<\/p>\n

Luego dividimos tres postres. La panna cotta con bayas frescas era la consistencia perfecta y las bayas estaban frescas y rebosantes de sabor. El pastel y el ganache de chocolate blanco tambi\u00e9n fueron perfectamente ejecutados y riqu\u00edsimos.\n<\/p>\n

As\u00ed que en esta excursi\u00f3n prob\u00e9 10 platos diferentes en tres platos, cada uno de los cuales fue ejecutado casi a la perfecci\u00f3n. El \u00fanico plato que encontr\u00e9 que faltaba era el pastel de nuez (sin foto). Ten\u00eda una corteza de pastel que era como una galleta que se desmoronaba cuando se cortaba. Esto puede mostrar mi educaci\u00f3n en el sur de los EE. UU. Donde los pasteles tienen bordes m\u00e1s crujientes.\n<\/p>\n

Aunque la decoraci\u00f3n es bastante informal y casi r\u00fastica, hay suficientes toques elegantes y un men\u00fa lo suficientemente sofisticado para justificar la colocaci\u00f3n de Ambros\u00eda en nuestra exclusiva categor\u00eda de comedor informal. Y en una ciudad con opciones gastron\u00f3micas limitadas en comparaci\u00f3n con la vecina Buenos Aires y Sao Paulo, la ejecuci\u00f3n casi impecable de estos platos \u00fanicos en un restaurante bellamente decorado, con exuberantes jardines, coloca a Ambros\u00eda en la parte superior de la lista de restaurantes en Santiago, y en toda Am\u00e9rica Latina.<\/p>\n
