Tampoco es una carrera exitosa como chef. Han pasado tres a\u00f1os desde que tuve el placer de cenar en Ambros\u00eda en Vitacura, donde la chef ejecutiva, Carolina Baz\u00e1n, ha estado despertando la sorpresa como chef y restaurantera. Y tanto la ciudad de Santiago como la chef Baz\u00e1n han evolucionado durante ese per\u00edodo de tres a\u00f1os que llevamos desarrollando este sitio web. <\/P> Ambros\u00eda Bistro es similar en muchos aspectos a el otro restaurante en los suburbios. La diferencia m\u00e1s evidente es el tama\u00f1o del restaurante. <\/P> Si el clima coopera, este peque\u00f1o restaurante puede albergar a unos 15 comensales en mesas en la acera y una mesa para seis al aire libre con vistas a la acera. Si el clima no es cooperativo, solo hay lugar para ocho comensales en las mesas frente a la larga barra que da a la cocina abierta de 4x4 metros donde un equipo de unos cinco chefs, un cantinero, un sumiller y dos camareros logran de alguna manera poner toda esta comida sofisticada en un plato frente a los comensales. <\/p> Ese bar tiene capacidad para otros quince comensales, todos los cuales vigilan bien de cerca de la brigada de cocineros que se ocupa de sus asuntos, cuando, por supuesto, no est\u00e1n entablando una conversaci\u00f3n con quien acaba de sentarse a su lado en este lugar para el pastoreo comunitario. <\/p> Aqu\u00ed es c\u00f3modo. Los amables cocineros y camareros intentan satisfacer las necesidades de cada comensal. Apenas hay espacio suficiente para que los chefs naveguen en esa peque\u00f1a cocina, sin embargo, ellos y los camareros mirando por encima de los clientes sentados en el bar, de alguna manera se encargan de la tarea. Es un poco ca\u00f3tico cuando el lugar est\u00e1 alborotado. Cometen Algunos errores por aqu\u00ed y por all\u00e1. Pero este elevado nivel de confusi\u00f3n es lo que hace que el lugar sea interesante y divertido. <\/P> En una visita reciente me sent\u00e9 en el bar de la cocina abierta frente al camarero, quien, por cierto, fue capaz de responder muchas preguntas sobre el men\u00fa. Eso es impresionante. <\/P> Algunos de los elementos del men\u00fa son similares a los que se ofrecen en el restaurante de Vitacura. Un ejemplo es el Agua de tomates, que rinde homenaje al humilde tomate. La chef Baz\u00e1n infunde el sabor de las frutas y verduras en un caldo de verduras frescas, complementado con deliciosos trozos de esas frutas y verduras. Prob\u00e9 una ensalada similar con fresas en mi visita anterior a Ambros\u00eda en Vitacura. <\/P> En esta visita al bistro m\u00e1s informal, opt\u00e9 por la experiencia carn\u00edvora completa. Si eres vegetariano, mira hacia otro lado. Mi aperitivo fue el Mollejas de ternera, una preparaci\u00f3n de sous vide de mollejas de ternera que luego se incrust\u00f3 ligeramente para proporcionar un contraste en la textura de las mollejas dulces mantecosas. Este fue un plato inusualmente delicioso. <\/P> De la lista de platos principales, opt\u00e9 por la \"Paleta de cerdo confitado\", otra preparaci\u00f3n de sous vide, esta vez porcina. Al igual que con el aperitivo, el cerdo se volvi\u00f3 casi mantecoso por el proceso sous vide, pero este trozo de carne de cerdo fue cubierto con un crujiente \"chicharr\u00f3n\", proporcionando un gran contraste en la textura. Las semillas de mostaza, pur\u00e9 de batata, frijoles y guisantes (con brotes de arvejas) fueron tan deliciosos y hermosos, en uno de los ejemplos m\u00e1s impresionantes de presentaci\u00f3n que he visto en mis visitas a cientos de restaurantes en Am\u00e9rica Latina. <\/p> \u00bfC\u00f3mo podr\u00eda la chef Baz\u00e1n encabezar estos dos cursos? Bueno ... ella ten\u00eda un extraordinario tiramis\u00fa deconstruido bajo la manga. A diferencia de un tiramis\u00fa cl\u00e1sico, el elemento de la torta de este plato solo conten\u00eda el m\u00e1s m\u00ednimo indicio de caf\u00e9. El sabor del caf\u00e9 lleg\u00f3 a trav\u00e9s de las manchas de crema dispersas por el plato. Me encant\u00f3. Fue simple y delicioso y se sirvi\u00f3 a la temperatura perfecta. <\/P> As\u00ed que, juntemos las piezas. La comida est\u00e1 hermosamente chapada y tiene el mismo sabor que se obtendr\u00eda en un restaurante elegante con manteles blancos ... \u00a1pero sin toda la pretensi\u00f3n y el aburrimiento! Te hace querer volver al d\u00eda siguiente. Tiene un precio razonable para que puedas volver al d\u00eda siguiente sin romper la alcanc\u00eda. <\/P> S\u00ed. Ese es Ambros\u00eda Bistro, obteniendo una calificaci\u00f3n general que coloca al restaurante entre la \u00e9lite de Am\u00e9rica Latina. Personalmente tambi\u00e9n destaco el incre\u00edble trabajo de la Sumiller Rosario.
