Y luego estaba Amaz en Lima, usando ingredientes similares de la selva amaz\u00f3nica en un ambiente caprichoso, colorido e informal. <\/P> Pero lo \u00faltimo que esperaba era una experiencia similar en Santiago, Chile. Viv\u00ed en Santiago durante tres a\u00f1os y lo \u00fanico remotamente \"ind\u00edgena\" que se me sirvi\u00f3 en un restaurante fue un pastel de choclo y humitas (ma\u00edz molido envuelto y cocido al vapor en hojas de ma\u00edz). <\/P> Pero el almuerzo en Peumay\u00e9n Ancestral Food cambi\u00f3 todo eso. <\/p>\n<p> Esta aventura culinaria llevada a cabo por los talentosos chefs del restaurante te lleva desde los extremos del norte de Chile a las g\u00e9lidas tundras de Tierra del Fuego. <\/p>\n<p> La aventura presenta un men\u00fa de degustaci\u00f3n de panes, panqueques de papa y una variedad de verduras y platos de carne que fueron b\u00e1sicos de las cocinas de las tribus ind\u00edgenas de Chile. Los comensales disfrutan de una variedad de bocados utilizando ingredientes que formaban parte de la cocina quechua en las regiones del norte de Chile y las tribus mapuches y huilliches que habitan las llanuras andinas alrededor de Santiago y los archipi\u00e9lagos de la Patagonia. Los comensales pueden entonces elegir uno de los platos principales con muchos de estos mismos ingredientes ex\u00f3ticos. <\/p>\n<p> El toque final es una variedad de postres aut\u00f3ctonos ofrecidos como otro men\u00fa de degustaci\u00f3n. <\/p>\n<p> El surtido de panqueques de pan y papa se sirve sin cargo. <\/p>\n<p> El surtido de aperitivos cuesta US $ 20 (CLP $ 12.500) y los platillos principales var\u00edan en precio de US $ 16 a $ 20 (CLP $ 10,000- $ 13,000). Alrededor de quinientos de ellos durante los \u00faltimos dos a\u00f1os y medio. Y esta experiencia se clasifica con la mejor de ellas. <\/P> Felicitaciones al proyecto ancestral de alimentos por llevar esta experiencia a Santiago en la forma de un restaurante de primera clase y a los talentosos chefs que hicieron todo en este men\u00fa, sabroso y agradable. <\/p>\n<p> Lo \u00fanico que no cumpli\u00f3 con esta experiencia fue que la informaci\u00f3n relacionada con los ingredientes y sus or\u00edgenes no estaba bien presentada. Los camareros luchaban por explicar estos ingredientes \u00fanicos tanto en espa\u00f1ol como en ingl\u00e9s para los comensales. Una explicaci\u00f3n impresa de cada plato y una breve descripci\u00f3n de la cultura o tribu de la que se origin\u00f3 ese elemento se sumar\u00edan a la experiencia.\n<\/p>\n<p>Estos men\u00fas de degustaci\u00f3n de tipo \"presentaci\u00f3n\" generalmente tienen un alto precio. Este fue, de hecho, extraordinariamente econ\u00f3mico.
