There are plenty of restaurants that offer sandwiches in Santiago, most of which fall under the category of what the Santiaguinos call a “fuente de soda” (soda fountain). And almost every one of them serves the same assortment sandwiches, none of which are particularly creative or tasty for that matter.
But over the past couple of years a few renegade restaurants have begun offering sandwiches that are a bit more imaginative with much higher quality ingredients than what’s available at those more traditional sandwich shops.
Sublime, in Vitacura, is one these new restaurants.
They take a bit more care in preparing the meats at the heart of the sandwich, including a few like the plateada (braised beef) for which the beef is braised for several hours until it melts in your mouth. You can add the condiments that you choose from a host of fresh options.
The sandwiches are delicious and inventive. But even more impressive than the sandwiches, are the side-dishes that are immensely more interesting than what you’ll find at the traditional sandwich shops “fuentes”, including big, beautiful oven-baked rustic potatoes, papas bravas, an assortment of bruschetta, fried calamari, fried shrimp, mini-sandwich sliders, salmon carpaccio and tenderloin tartare.
Sublime offers a limited number of desserts including Tiramisu and a Suspiro Limeño. Kids menu? You bet. The little ones can enjoy some pint-sized sandwiches along with the adults. Another plus is that Sublime offers a wide assortment of high-quality craft beers and something you don’t see too often in Santiago … Coors beer.
The ambiance is pleasant with a modern industrial loft-appearance. There’s outdoor dining in the front, rear and along the side of the restaurant. The waiter was efficient, but we wish we could have coaxed a smile out of the guy. He had a profoundly serious look on this face the entire time.
With a wide assortment of traditional sandwiches done in very nontraditional ways, Sublime is a welcome addition to this part of Vitacura.
