Casa Cavia organiza una especie de obra de teatro. Ninguno de los actores del elenco de personajes o del equipo detr\u00e1s del escenario es ni remotamente famoso. Simplemente hacen silenciosamente que los engranajes y engranajes de Casa Cavia funcionen sin problemas, con un m\u00ednimo de chirridos.<\/p>\n

\u00bfQui\u00e9n es ese elenco de personajes? Est\u00e1n los arquitectos de dise\u00f1o que preparan el escenario para esta obra y el bibliotecario que crea los seminarios y presentaciones sobre temas culinarios en la biblioteca que tambi\u00e9n funciona como un gran comedor para grupos y tambi\u00e9n en la biblioteca de arriba de la formidable mansi\u00f3n que alberga el restaurante. El florista interno construye los arreglos florales del restaurante y mantiene el impresionante patio en su mejor aspecto para que puedas disfrutar de un c\u00f3ctel all\u00ed en una fresca tarde de primavera.<\/p>\n

\u00bfDije c\u00f3ctel? Oh. As\u00ed es. Hay un talentoso equipo de camareros que se ocupan de esa tarea. Y la tarea del barista de cuidar la m\u00e1quina de caf\u00e9 expreso. Luego est\u00e1 el equipo detr\u00e1s del escenario. El publicista, el personal administrativo y los talentosos empleados que crean los men\u00fas y el sitio web.<\/p>\n

\u00bfQu\u00e9 pasa con los cocineros y los camareros? Cuando vi que la joven chef ejecutiva hab\u00eda pasado sus a\u00f1os de desarrollo en el famoso restaurante Mugaritz de Espa\u00f1a, supe que no me decepcionar\u00eda la comida. Puede que El Bulli de Espa\u00f1a haya recibido la mayor parte de la prensa durante la \u00faltima d\u00e9cada, pero Mugaritz es el caballo de batalla culinario, que produce chefs j\u00f3venes y talentosos, como Julieta Caruso de Casa Cavia, m\u00e1s r\u00e1pido de lo que Henry Ford produjo autom\u00f3viles. Los dos j\u00f3venes chefs que desarrollaron la cocina en Lorea, el dominio gastron\u00f3mico m\u00e1s nuevo y posiblemente mejor de la Ciudad de M\u00e9xico, eran, al igual que el talentoso chef de Casa Cavia, ambos protegidos en Mugaritz.<\/p>\n

La discreta elegancia de la decoraci\u00f3n y el ambiente, el men\u00fa sencillo pero bien ejecutado y el servicio eficiente eran justo lo que se esperar\u00eda de un restaurante de clase mundial.<\/p>\n

Tambi\u00e9n nos gusta el hecho de que tienes la opci\u00f3n de pedir a la carta, a diferencia de muchos de los restaurantes exclusivos de la ciudad que solo ofrecen un men\u00fa de degustaci\u00f3n de precio fijo.<\/p>\n

Todo esto se suma a que Casa Cavia cae de lleno en el grupo \u00e9lite de los cinco mejores restaurantes de lujo de Buenos Aires.<\/p>\n
