He estado haciendo eso mucho \u00faltimamente. Odio decepcionarte, pero Osaka es un restaurante que hace honor a su reputaci\u00f3n estelar.<\/p>\n<p>Osaka es el resultado de la colaboraci\u00f3n entre los chefs peruanos Daniel Delgado Jitsuya y Jan Van Oordt. Ellos hacen a mano el estilo y el men\u00fa de estos restaurantes. Desde entonces, el grupo ha sido adquirido por inversores, que, sorprendentemente, en lugar de correr el restaurante en el suelo, han convertido a Osaka en un centro neur\u00e1lgico de Am\u00e9rica Latina en el mundo gastron\u00f3mico, s\u00f3lo igualado por el imperio de su compa\u00f1ero peruano Gast\u00f3n Acurio en el mismo reino.<\/p>\n<p>Ahora tienen restaurantes en las principales ciudades de Am\u00e9rica Latina, y en base a fuentes confiables, la calidad en cada uno es excepcional. Pero s\u00f3lo podemos dar fe del ambiente, el servicio y la calidad de la comida que se sirve en los lugares de Santiago y Puerto Madero (Buenos Aires), que son igualmente impresionantes en ambos pa\u00edses.<\/p>\n<p>Esta es la cr\u00f3nica de nuestra reciente visita de medio d\u00eda a la sede de Osaka en Puerto Madero.<\/p>\n<p>El ambiente es impresionante. Las im\u00e1genes en el control deslizante reflejan con precisi\u00f3n el dise\u00f1o de buen gusto y decoraci\u00f3n. Cen\u00e9 al final de la tarde por lo que mi evaluaci\u00f3n del servicio podr\u00eda no ser lo que se espera en una noche concurrida. Sin embargo, el servicio que recibimos fue impecable. Era tan tarde en el servicio de almuerzo que la camarera que inicialmente tom\u00f3 mi pedido fue sustituida por el jefe de camareros a mitad de mi estad\u00eda. Sin embargo, todos los camareros eran capaces de responder a las preguntas bastante complejas sobre las tres cosas que ped\u00ed.<\/p>\n<p>La mesa estaba puesta en un estilo minimalista; que vemos en casi todos los restaurantes de comida casual de lujo que revisamos.<\/p>\n<p>El servicio comenz\u00f3 con un peque\u00f1o aperitivo, seguido de dos tipos de aperitivos que hab\u00edamos pedido, dos peque\u00f1os: causas, rematado con peque\u00f1os trozos de pulpo a la parrilla en salsa de miso delgada con sabor a pimiento chile panca peruanos. El contraste entre ambos sabores y texturas entre la base de patata cremosa suave y los trozos de pulpo ligeramente carbonizados que coronan la causa eran grandes. He probado una gran variedad de causas, incluyendo un par de docenas o m\u00e1s en los restaurantes de Per\u00fa y Chile, y este es el m\u00e1s sabroso de todos. Yo no dudar\u00eda en decirle que probaran en dos o tres variedades.<\/p>\n<p>Entonces tuve una variaci\u00f3n sashimi. Dos piezas perfectamente rodajas de agari (salm\u00f3n) marinado a la ligera, en un sushi-arroz con sabor, cubierto con virutas de c\u00edtricos. \u00danico. El sabor del salm\u00f3n super\u00f3 los tiraditos recientemente que ten\u00eda en Sippan en Palermo y en el restaurante del famoso chef de Nobu Matsuhisa, Nobu, en la Ciudad de M\u00e9xico. No dudar\u00eda en ordenar cualquiera de los sushi o tiraditos en el men\u00fa.<\/p>\n<p>Todo lo que hab\u00eda probado hasta ahora, incluyendo tanto el pulpo cocido y el salm\u00f3n crudo era fresco y sabroso. Y la presentaci\u00f3n, como se puede ver en las fotos en el control deslizante, era impecable. Mi plato era un surtido de calamares, pulpos y camarones, marinado en sake y se sirve con una salsa cremosa con sabor a tanto amarilllo y pimientos aj\u00ed panca. El pulpo tambi\u00e9n hab\u00eda sido ligeramente espolvoreado con especias molidas haciendo que la preparaci\u00f3n muy similar a una preparaci\u00f3n tradicional mediterr\u00e1nea del \"pulpo a la gallega\". Las diminutas piezas de calamares eran los m\u00e1s singulares, pero todos estaban perfectamente preparados. Es f\u00e1cil de cocinar demasiado a los camarones, pero \u00e9stos eran gorditos y h\u00famedos. Dicho esto, sent\u00ed la presentaci\u00f3n y los sabores un poco aburridos, en comparaci\u00f3n con los dos aperitivos. Y sent\u00ed todo el plato apretujado en el recipiente de barro en la que se sirve. Tomo nota de que el camarero hab\u00eda llevado a cabo peque\u00f1as virutas de jengibre encurtido. Pero esto no era nada como las rodajas de jengibre amargo que normalmente recibir\u00eda un lado su porci\u00f3n de sushi.<\/p>\n<p>Estas finas l\u00e1minas de papel se hab\u00edan conservado en vinagre en un l\u00edquido de decapado agridulce que les hac\u00eda absolutamente delicioso. Con varias picaduras al final del plato, que estaba tomando un poco de jengibre con cada bocado de mariscos y un poco de arroz cocido al vapor con una gota de salsa de soja, y la combinaci\u00f3n fue excepcional.<\/p>\n<p>Debo decir que este almuerzo en Osaka era un poco caro. Para la cantidad de comida que se sirve es muy probable que sea el restaurante con m\u00e1s alto precio en Buenos Aires. Pero dicho esto, el ambiente, el servicio y la ejecuci\u00f3n lugar en posici\u00f3n con restaurantes como en las inmediaciones Chila y Roux en Recoleta.<\/p>\n<p>Y los porte\u00f1os ricos (aunque sean pocos en n\u00famero) y los viajeros de ciudades como Nueva York, Sydney y Tokio, no se inmutar\u00e1n por el precio de 72 d\u00f3lares para el almuerzo en Osaka.
