I wasn’t sure what to expect from this place. The photo of a burger I had seen online from this place had a patty that was ground way to fine and packed into a tight patty. Despite positive things I had read about the burgers I was expecting a disappointment.

The décor of this place is pretty nice. The place clearly focuses on burgers. The menu explains the restaurant’s name as being a shrine to the alleged inventor of the hamburger, a guy named Uncle Fletch (real name, Fletcher Davis) from Athens, Texas. Being from Texas myself I’m not going to take issue with the claim that Uncle Fletch invented the burger.

But the real question remains … Regardless of who invented the burger, which restaurant in Santiago has come closest to perfecting it and will Uncle Fletch take those honors?

I ordered the standard cheeseburger, the Original Uncle Fletch. The burger was ground acceptably, although a bit under seasoned. The “cheddar” cheese was some type of processed yellow concoction that didn’t taste much like any cheddar I had previously encountered. The bun appeared to be custom baked, boasting a stately dome on top. But the bun was a little dry and did not reflect the qualities I typically associate with a buttery brioche.

The “Paris” fries had potential. A thin cut “skin on” potato slice. These would have been the best fries of all the ones I tested were it not for the fact they were served just barely warmer than cold. By the time I had eaten one or two they were becoming intolerably cold. Unfortunately, this lapse of execution required me to score Uncle Fletch down a bit on the fries.

The sauces and garnishes were good enough. A spicy mayonnaise served in a ramekin on the side. The menu said it came with a side of slaw but as you can see from the photos the little ramekin of slaw barely contained a forkful. What little bit I was able to pull out of the container was a little dry and devoid of taste.

Service was good. Ambiance is that trendy urban loft look. Tasteful. I liked it. I’d go back for a beer based solely on the surroundings.
