Yuban, located in Roma Norte, within paces of Insurgentes, is another “New Breed Gourmet” restaurant, a term we recently coined in response to an explosive surge of openings of this type of restaurant in Buenos Aires. The term describes an ultra-casual restaurant that despite its lacking the other trimmings of haute cuisine, serves food that approaches gourmet status or clearly achieves it.

The décor, although simple, is very tasteful. The space features a large antique bar. The bar tender is anything but antique. Like the cooks and “hippy chick” waitresses, the bartender was wearing a “Save the planet!” t-shirt and had more than a couple of tattoos, which apparently aids in the production of cocktails containing mezcal.

The cuisine draws from every region of Mexico’s vast terrain and Chef Fernando Zavala’s modern interpretation renders eloquent versions of the traditional cuisine.

On my latest visit, I opted for the braised short rib with Zavala’s take on a classic mole amarillo. It was perfectly executed. The mole was complex, but velvety smooth. At about that moment I was having a chocolate urge of grand proportion that could only be satiated by that ultra-moist chocolate cake on Yuban’s dessert menu. It features hand-ground Mexican chocolate, blueberries and a jlotilla sorbet (a fruit so unique that even Google doesn’t know it exists).

The service was friendly and relatively attentive. The prices are quite reasonable, although slightly more expensive than nearby Huset, offering a similar style and quality of cuisine and ambiance.

Yuban offers those that feel more comfortable in a less formal setting the opportunity to experience cuisine similar to what’s found at Quintonil and Pujol at about half the price.
