Leave it to a New Yorker to find a better use for a part of the chicken everyone was using to flavor stocks and soups or throwing away. There are a couple of conflicting stories about which bar or restaurant in Buffalo, New York, came up with the creation of a plate full of fried wings drenched in a spicy sauce that later came to be known as Buffalo wings.
